Honey Loaf Cake

Here is a cake recipe that I have been using a lot during the lockdown and thought it might be good to share it with others.

Ingredients:

2 tbsp. runny honey
200 g unsalted butter
80 g dark brown soft sugar
2 large eggs
200 g self-raising flour
1 1/2 tsp. mixed spice
100 g icing sugar, sifted

Directions:

Melt together the butter, honey and sugar in a pan over a low heat. Turn up heat when sugar dissolved, and allow to bubble for 1 minute. Remove from heat and cool for 15 minutes. Mix in the eggs.

Sift flour and spice into a bowl, add butter mixture and mix well. Pour into a 900g loaf tin lined with baking parchment. Bake for 40-50 minutes in  preheated oven at 160°C (140°C fan), until a skewer placed in centre of cake comes out clean.

Leave to cool for 5 minutes then remove from tin and allow to cool on wire rack. When completely cool, glaze by placing icing sugar in a bowl and whisking in just enough water for a runny consistency. Drizzle over cake and leave to harden. Serve in slices spread with butter, if desired.
